Texas Sheet Cake Cookies

My son Ciaran and I have been experimenting with different cookie recipes each weekend. It's not that great for the "low carb" way of eating but, my oh my is it ever good!! ;) We happened upon this recipe for Texas Sheet Cake cookies and as always, had to put our own spin on them.
I will say that once these hardened in the fridge, they did not last long in our house and my boys have been asking for me to make them again.
Texas Sheet Cake Cookies
Ingredients
Cookie
1 box chocolate cake mix
2 eggs {whisked}
1/3 cup softened butter
(Dough will be thick)
Frosting
1/2 cup butter
2 tbsp cocoa
3 tbsp milk
2 1/2 cups powdered sugar
Instructions
Cookies
Preheat oven to 350 degrees.
Combine cookie ingredients in large bowl and mix until completely incorporated. Remember: Dough will be thick.
Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment lined cookie sheet.
Bake for 7-8 minutes, remove from oven and let cool on cookie sheet for 3-4 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
Glaze
Combine the first 3 glaze ingredients in a small saucepan over medium heat and whisk until the mixture has melted. Remove from heat, add powdered sugar and whisk until smooth.
Pour glaze over cookies. Use a spoon to move excess glaze and be sure that each cookie is completely covered.
Let glaze set and serve. Note: I find that putting them in the refrigerator for a few hours before serving really firms up the glaze.
