Time to start back at this trying to eat healthy stuff and sticking to it.... we shall see how long this lasts but it is so yummy!! I decided to make a small salad for lunch today for my husband and I. If I have to eat healthy, so does he ;) For all of the prep work that it took, it tastes so good!!
1/4 cup Mayonnaise
1/2 Lemon (juice)
2 1/4 tsp Honey
1 tbsp Poppy Seeds
2 1/2 cups Broccoli
1 1/4 cup Strawberries
1/4 Red Onion
1/2 cup Sliced Almonds
In a small bowl, whisk together the mayonnaise, 1 1/2 tbsp of the lemon juice from your lemon, honey, poppy seeds and salt and pepper to taste. Set aside in the fridge until you are ready to use.
Chop broccoli into small bite size pieces. Trim the stems from strawberries and cut into thick slices. Peel and dice your onion.
In a medium serving bowl, toss the strawberries, broccoli, onion, sliced almonds and dressing until evenly combined. Enjoy.
