Spicy Tuna and Avocado Lettuce Wraps

I have gotten addicted to these lettuce wraps from Platejoy recently. What is Platejoy, you ask? It is an awesome website that I stumbled across while looking for keto recipes that I can incorporate into my every day life. Platejoy takes the planning out of your meals by giving you recipes that you can use for Breakfast, Lunch and Dinner (and even snacks). You can choose which plan you would like to go with....Keto, Low Carb, Mediterranean, Paleo... to name a few. It costs $99 for the year but for me, I feel it's worth it to not have to sift through millions of Pinterest recipes every weekend to make up a meal plan for the week. This recipe has come up a few times (it helps that I've listed it as one of my favorites also). It is so simple to make and very filling. I love the fact that it has my favorite, avocados, in the recipe and a small amount of heat with jalapeños. Here is my favorite go to for lunch....
Spicy Tuna and Avocado Lettuce Wrap
Ingredients
5Â oz canned tuna
½ jalapeno pepper
½ avocado¼ lime
â…“ butter lettuce head
½ tsp sriracha
salt, pepper and cumin to taste
Instructions
Place tuna in a medium bowl and break apart with a fork.
Remove the top of a jalapeño pepper (remember to remove the seeds and ribs, unless you would like it much spicier); finely mince the pepper and add to bowl.
Scoop out the meat of the avocado into the bowl and mash all together in the bowl.
Add 1 tsp of lime juice and mix to combine.
Add salt, pepper and cumin to taste.
Separate and wash butter lettuce leaves. Dry completely and spoon tuna mixture onto the lettuce leaves. If you want an extra kick, add some sriracha to each wrap.
Makes 1 Serving
