Sloppy Joe Stuffed Biscuits


It's a school night, the kids are hungry and you want to make something quick, right? That seems to be the same dilemma for any night of the school week! I decided to be proactive (for once) and check on my trusty Pinterest for inspiration for dinner. Pinterest never seems to fail, thankfully, and I found the almost perfect idea (that I ended up tweaking).


This recipe turned out to be a new hit in our household! It combines two beloved items.... sloppy joes and biscuits. My kids absolutely love biscuits! Truth be told, before I stopped eating my weight in carbs, I used to also!! ;) The fact that it only took me less than an hour to whip this up is even better.


Sloppy Joe Stuffed Biscuits Recipe

Prep Time: 20 minutes

Cook Time: 15 minutes


Ingredients:



5 Easy Ingredients, just missing the Italian Seasoning in the picture

  • 2 cans biscuits, 24 rolls total

  • 1 pound ground beef

  • 15 ounces sloppy joe sauce

  • 1 1/2 cups shredded cheese

  • Italian seasoning to taste


Instructions:

  1. Preheat oven to 350 degrees. Grease 24 muffin tins. (Two 12 cup muffin tins)

  2. Brown and crumble ground beef until cooked through. Drain meat if desired. Add sloppy joe sauce, and heat until warmed through.

  3. Meanwhile, pull apart each biscuit into 3 parts. Place one biscuit circle into each muffin cup. Press dough into the muffin tin and up the sides, creating a little base for the bombs.


Taking one biscuit and making it three.

  1. Spoon about one to two tablespoons of sloppy joe mixture into each roll lined muffin cup. Sprinkle grated cheese over the meat in each cup.

  2. Pull corners of biscuit up over the top of the filling. Don’t worry if there is cheese and sloppy joe mixture peeking through. (That is what the top is for ;)

  3. Place another biscuit circle on top of each muffin cup, to cover the cheese and meat. Using a fork, lightly push down the sides of the muffin cup to combine the top and bottom biscuit.

  4. Sprinkle tops of Sloppy Joe Biscuits with Italian seasoning.

  5. Bake for 15 minutes, until tops are golden brown. Let sit for about 3-5 minutes then serve!


These were a hit in my house!
